Healthy Honey Muesli Bars
1/4 cup Sesame Seeds
1 cup Toasted Muesli
3 cups Rice Bubbles
1/2 cup Coconut
1/4 cup Sunflower Seed Kernels
125 g Butter
1/3 cup Honey
1/3 cup Peanut Butter
1/2 cup Raw Sugar
Method:
1. Grease a 19cm x 29cm lamington pan.
2. Toast Sesame Seeds on an oven tray in a moderate oven 180C for about 5 minutes, cool to room temperature.
3. Combine Muesli, Rice Bubbles, Coconut, Sunflower and Sesame Seeds in a bowl.
4. Combine Butter, Honey, Peanut Butter, and Sugar in a saucepan, stir constantly over heat without boiling until butter is melted and sugar is dissolved. Bring to the boil, reduce heat, simmer uncovered without stirring for 5 minutes.
5. Pour liquid into dry ingredients an mix thoroughly to combine.
6. Press into prepared pan, refrigerate until set before cutting. Keeps for 1 week.
