Hotcakes
1 cup Self-Raising Flour
1/8 tsp Bicarbonate of Soda
1 large Egg
150ml Milk
1 Tbs Caster Sugar
30g Butter
Topping
1 Banana (thinly sliced)
2 Tbs Maple Syrup
1 scoop Vanilla Ice-cream
Method:

Method:
- Sift the flour and bicarbonate of soda into a medium bowl.
- In a jug, beat together the milk, egg and sugar.
- Gradually add the milk mixture to the flour. Beat until combined.
- Put the batter in the refrigerator for 15 minutes.
- Put about 1/2 tsp butter in a medium frypan and turn the heat to medium.
- Fill a 1/4 cup measure with the batter, and pour into pan.
- Cook the hotcakes for about 2 minutes or until small bubbles have burst on the surface. Turn the hotcake over and cook for a further 2 minutes.
- Cook the rest of the batter in the same way using the remaining butter.
- To prepare the hotcakes; Add sliced banana in between each hotcake. Drizzle the top with maple syrup. Top with a scoop of vanilla ice-cream.
