Mud Muffins
60 g Butter
1/2 cup Raw Sugar
120 g Chocolate
2 Tbs Cocoa
1/4 cup Water
1 1/2 cups Self Raising Flour
2 Eggs
1 cup Sour Cream -or- Natural Yogurt
12 Muffin size patty pans

1/2 cup Raw Sugar

Method:
- Preheat oven to 180C.
- Place muffin patty pans into a 12 hole muffin tray.
- Melt butter, sugar, chocolate, cocoa and water over low heat until well combined. Allow to cool.
- In a large bowl sift flour, add cooled mixture and stir in eggs one at a time.
- Add sour cream and mix well.
- Spoon mixture evenly into the 12 patty pans.
- Bake for 15 to 20 minutes or until firm to touch.
- Allow to cool for 5 minutes and turn out to a wire rack to cool.
