Design your own Vegetarian Nachos
1/4 Onion
80g Corn Chips
1/4 cup Tomato Salsa
1/4 Avocado (diced, optional)
70g Mozzarella Cheese (grated)
2 Tbs Light Sour Cream
pinch Paprika -or- Chilli
and
choose one type of canned beans
1/2 cup Butter Beans (drained)
1/2 cup Red Kidney Beans (drained)
1/2 cup Three Bean Mix (drained)
Method:
80g Corn Chips

1/2 cup Butter Beans (drained)
1/2 cup Red Kidney Beans (drained)
1/2 cup Three Bean Mix (drained)
Method:
- Collect and prepare ingredients. Preheat oven to 180C.
- Mash beans in a small bowl. Add beans to onion.
- Arrange chips in ovenproof serving bowls.
- Spoon bean mixture into the centre of the chips.
- Pour taco sauce onto the bean mixture.
- Place diced avocado on top. Sprinkle grated cheese over.
- Place bowls on an oven tray and bake for 10 minutes or until the cheese melts.
- Serve topped with sour cream and a pinch of paprika or chilli.
- Place a larger plate under the hot nacho bowl when serving.
